Color, flavor, texture, drying uniformity, microbial risk, foreign material, piece size, and moisture pickup are influenced at different stages. By the time sealed cartons reach the finished-goods area, some defects can be detected, but they may no longer be practical to correct.
A stronger control plan follows the material from receiving to release. It defines what is checked, when it is checked, how the sample represents the lot, which method is used, who reviews the result, and what happens when a result falls outside the agreed limit.
Quality Starts With The Raw Fruit Lot

Variety, origin, maturity, soluble solids, acidity, firmness, size, bruising, decay, temperature, and time after harvest can affect the dried product. Incoming inspection should confirm identity and condition against the order specification. When chemical hazards such as pesticide residues or heavy metals are relevant, the control may combine supplier approval, agricultural records, periodic testing, or lot-specific testing according to the buyer's hazard analysis and market requirements.
Receiving records should connect the supplier lot to the internal raw-material lot. Material held for results needs clear status identification and physical control so it is not released accidentally. Rejected, conditionally accepted, and re-sorted fruit should remain traceable to the original delivery.
Preparation Controls Define The Final Geometry
Washing, peeling, pitting, coring, trimming, slicing, dicing, and pretreatment affect both safety and appearance. Cutting controls should include nominal size, tolerance, equipment settings, and inspection frequency. A strawberry slice that is too thick may dry unevenly; an undersized dice may become fines after handling. Broken or damaged raw fruit can also create color variation and sticky surfaces.

Drying Control Is More Than A Timer

A validated cycle should demonstrate that the intended load reaches an acceptable and reasonably uniform condition.
Operators can monitor equipment parameters during the cycle, but finished moisture or water activity provides different information. Moisture content measures how much water is present; water activity reflects the availability of water in the product. Buyers should agree which measure, method, sample location, and limit control release. Averages can hide wet centers or tray-to-tray variation, so sampling design matters.
Microbiological Testing Supports, But Does Not Replace, Prevention
Freeze-drying is not automatically a pathogen kill step. A low-moisture result can limit microbial growth without proving that pathogens were absent before drying. The food safety program should therefore control raw materials, personnel and equipment hygiene, post-process exposure, environmental risks where relevant, and packaging integrity.
Finished-product criteria may include aerobic plate count, yeast and mold, coliforms, E. coli, or pathogens such as Salmonella, depending on the product, use, destination, and buyer specification. Test methods, sample units, composite rules, laboratory competence, and acceptance criteria should be documented. A negative result applies to the tested sample; it is not proof that every unit in the lot is identical.
Packaging Is A Quality-Control Operation
Packaging checks should cover the correct material and artwork revision, liner condition, seal cleanliness, seal strength or integrity, net weight, coding, case count, and pallet protection. Because moisture pickup can soften fruit and promote caking, the barrier and sealing process are part of the product specification.
